It’s only Wednesday and we are all dreaming of the weekend. Sometimes we need a little pick-me-up, and this SKINNY Blueberry French Toast is exactly what your tired, under-enthused, mid-week self needs. Besides the obvious of being superbly delicious, this breakfast is full of antioxidant-rich blueberries, fiber-rich whole grain bread and protein-packed eggs. Like I said, exactly what you need.
Incredibly easy to make, SKINNY Blueberry French Toast can be whipped up and enjoyed right out of the oven, or portioned out and stored in the fridge or freezer to spread the fancy throughout the week. You can heat it up or eat it cold (as I sometimes do)!
I’ll get into the details below, but I wanted to share a little resourceful tip: Use the end pieces of your bread loaf (yeah the ones no one ever wants to make their sandwich with). They work fantastic in this recipe! Also, I prefer ‘Good Seed’ by Dave’s Killer Bread. The end pieces are actually my favorite part as they are loaded with yummy seeds which add more texture to this dish.
