You know that moment when you stare blankly at your fridge, nothing looks good, or it seems like a lot of work to prepare? Yeah, that was me at 6pm last night. Cereal sounded like a great idea, but I have been really trying to be conscious of my veggie intake (I know I’m a vegetarian, so this should be easy, but trust me – not always the case!). So as I’m going through the produce drawer I find a small head of cabbage – super easy to prepare + the kiddo’s can help. :)
I decided to roast it – simple and savory – my favorite!
First, we sliced up the cabbage about 1 inch think – nothing fancy, and definitely doesn’t have to be perfect. Placed it on a lightly greased baking sheet (mine is about a 100 years old ♥).
Then brushed with 2 tbs Thrive Algae Oil – the secret ingredient!
This stuff is amazing! It has 75% less saturated fat than olive oil, so a good heart-healthy replacement. And it can easily be added to anything – containing a really light, neutral flavor. It just leveled out the bitterness of the cabbage and enhanced the roasting yumminess.
We then topped the cabbage with coarse ground pepper, pink himalayan sea salt, and some herbs (I had rosemary on hand).
Then roasted at 400 degrees for about 35 minutes. (I sautéed shrimp with lime juice and cilantro while in the oven)
The trick is not eat the entire pan yourself…it’s so good, but you should definitely share :)
I have a little leftover today, so I’m adding it to some greens + tomatoes + garbanzo beans for a quick lunch! (+ Algae oil for dressing)
