I’m currently dreaming of warm, sunny afternoons that extend into late nights in the backyard – as the littles play up until bedtime. This has been a very unique (& cold!) winter, especially in the PNW, and while we love our snowy mornings – I think we’re finally getting ready for spring. It’s time to hang up the mittens and soak up that beautiful Vitamin D – which is oh so close!
So to get ready, I decided to whip up one of my favorite pasta salads – mainly because it is so darn easy and all the fresh veggies make me think of warmer seasons. This time, I added a new twist that makes it a million times better…I paired it with mini salmon cakes!
I was inspired by my friends at Acme Farms + Kitchen when they included a salmon cake recipe in our recent box delivery. It was my first time using ground salmon and I couldn’t believe how simple it was to create these delicious little cakes!
For the pasta salad, I have made this recipe a hundred times, and vary it depending on what veggies I have in my fridge. For the sake of this post, I stuck to my typical formula – and one that seems to please most palettes.
In addition to the salmon cakes, I tried something new – using Chickapea Pasta, made entirely of chickpeas and lentils. Cooked al dente it is the perfect compliment to this recipe. Chickapea Pasta has a slightly nutty flavor and I personally think tastes way better than your typical durum wheat flour variety. Plus, it’s so good for you…

- Gluten free
- No added sugar or salt
- Only has two ingredients – chickpeas and lentils!
For the dressing, my preference is Annie’s Lite Italian – which you can find at most grocery stores.
The recipe serves 4 but can easily be doubled – and makes for a fantastic potluck dish! I hope you enjoy it as much we do and feel free to comment with any questions you may have!
