With the return of rain, it just feels good to have those days where you stay home, stay cozy and bake. This week, as the skies were drizzly and the grass was wet, gathering in the kitchen and throwing on aprons just made sense. I had a package of Bob’s Red Mill Gluten Free Muffin Mix that I was anxious to try, so that’s where it all began…
I had two mini helpers that were just perfect for the job.
With baking, we include chocolate 99% of the time, so this was definitely happening.
And we threw in coconut, because well, it just sounds good, right?
After spooning in muffin tins and baking for about 20 minutes…Ta Da!I wasn’t sure what to expect from these Gluten Free goodies…but they were Uh-MAZING! They tasted like cake! The littles gobbled a few of them up right away (as did I), so we had to quickly set them aside, so there would actually be evidence we baked that day. :)
I will definitely be making these again (like weekly), and might mix up the variation for fun (though I’m pretty excited about the coconut chocolate chip!).
