It’s lunchtime and I am hungry. I want something…like NOW. I didn’t meal prep this week (darn it!!), therefore, I am left to come up with something healthy on the fly. I looked out my window and saw my garden bursting with green goodness (next to all of the weeds…I try but I can’t keep up!)…and the obvious occurred – go pick my lunch! So I did and created this delicious Garden Fresh Wrap!
So I started with a big handful of chard and a HUGE bucket full of zucchini (not to worry more zucchini recipes to come, because if we know one thing about a garden – zucchini runneth over!). My next plan of action was to determine my protein source and I decided it was the perfect time to try the new Morningstar Farms® Meditarranean Chickpea Burger that I picked up at Costco this week. My 4 year-old is not at all a vegetarian like her momma, but when she tried this in the store – she begged me to buy them – top it off they are 18g of protein! In the cart they went.
I then pondered a ‘dressing,’ as typically I would throw a bit of Feta in, but I’m trying to take it easy on the dairy, as it wreaks havoc on my skin. I determined salsa would be the perfect compliment – and it totally was! I threw everything in a whole wheat tortilla and total Garden Fresh Wrap magic happened!
Only 5 ingredients makes this wrap super simple and completely doable for a last minute lunch or dinner! And the best part you can sub out any veggies you have on hand (or in your garden!). Let me know if you try a different variation!
