My mother-in-law is known for her massive garden and graciously gifts us bountiful baskets chock-full of veggies all Summer long. The first harvest included kale, romaine and broccoli. So much broccoli. And I LOVE it. So I turned to my trusty friend, Pinterest and we decided to make the most amazing roasted broccoli known to humankind – also known as Crack Broccoli. You guys…this stuff is no joke – like eat an entire head of broccoli all by myself no joke. It is so addicting…
So you start with a beautiful head of broccoli (actually 2 for this recipe)…
Then add gourmet Extra Virgin Olive Oil like Esplendido Douro, and let the magic begin…
So this recipe is actually super simple and easy to modify. You create this yummy olive oil + seasoning dressing, toss in broccoli and roast for 10-20 minutes. You can also top with sliced almonds (as I did), and finish with a squeeze of lime and grated parmesan. I actually left out the final step, mainly because I was too damn hungry and it was sooooo good already…I didn’t feel it was necessary, though I’m sure it would have increased the crack factor to another level. I’ll try it next time. :) Or maybe you try it and let me know if it blows your mind (as I’ve heard it does…says Pinterest). And we all know Pinterest knows her stuff.
