I LOVE dessert…but I also want to wear THIS bikini in 2 months…so in order to feel good inside and out, I need to maintain the good ol’ clean regime. Which I’ll be honest, isn’t so bad when you have amazing recipes like the one I’m sharing with you today. I borrowed it from Zemas Madhouse Foods, one of my favorite gluten-free brands that has so many goodies from cookies, to brownies, to pancake and waffle mix. Whether you’re GF or not, their recipes are loaded with delicious ancient grains that I guarantee your taste buds (& your body) will love.
The Chocolate Chia-Cookie Pudding Parfait is made with Zemas Mini Double Chocolate Cookies. The recipe only requires a few other ingredients, most of which you’ll already have on hand. I tend to lean on the easier side of cooking/baking/really anything in the kitchen, so this seemed right up my alley.
Oh, and I have a thing for mason jars…so whenever I have the opportunity to use them for a recipe – I get excited (think overnight oats, salads, jam, etc.). Not sure they’re still ‘on trend’ but I plan to have dozens on hand at all times…for the rest of my life – they work for so many things!
The Chocolate Chia-Cooking Pudding Parfait is not only gluten-free, but also vegan, refined sugar free, and made without artificial colors, additives and preservatives, plus it’s packed with a super seed trio of chia, hemp and flax meal which are rich in omega-3 fatty acids, protein, fiber and antioxidants.
