To kick off the 4th of July festivities, I’m sharing a featured recipe from my dear friend Kathy, founder of one of my favorite blogs, Before and After My Empty Nest. I actually met Kathy several years ago, she is a well-known swim instructor in the area and fortunately we made the wait list and my daughter’s have been swimming with her ever since. Because of our mutual love for food, fitness and adventure, Kathy and I became fast friends…and someone I can confidently turn to for advice with my littles. She has twin sons now in college, which as you can assume, comes with years of wisdom on the do’s and don’ts of parenthood. After a bit of urging on my part, along with ALL of her friends…she finally started a blog this year sharing her adventures as an ’empty nester’ – providing insight on how to find your own path as a woman, before, during and after you have kids in the home…and most importantly, how to maintain your individual spirit while in the throws of motherhood. I know this was a lengthy intro, but when you truly adore someone, it’s hard to put into just a few words. One of my favorite things about Kathy is her inspired love for baking…she is constantly reinventing recipes to create a healthy spin, so I requested she whip up something special or the holiday…
