I recently had the opportunity of attending Everything’s Coming Up Rosé at TRACE, the contemporary, urban restaurant and bar inside one of Seattle’s swankiest hotels, the W. TRACE is known for their curated menu of local infusions, farm-to-table experiences and an emphasis on sustainable seafood. Also proven to be wildly popular are their handcrafted cocktails featuring local distilleries and a prominent representation of Washington winemakers.
Everything’s Coming Up Rosé was an event to bring local winemakers and the community together to enjoy a 3-course seated dinner specially crafted by TRACE Chef Steven Ariel. He created a menu to pair beautifully with an array of rosés from Woodinville Wine Country.
Dinner included pan seared scallops over a baby lettuce and “green goddess” salad, followed by an entrée of grilled halibut and local asparagus with a garlic prawn butter sauce. A delightfully-light berry pavlova, topped with a basil chia seed sauce, rounded out the summertime menu. Each course was exquistely paired with a local rosé by Woodinville winemakers.
